Ingredients

  • 4 yolks
  • 8 egg whites
  • 1 cup hot water
  • 2 cups skim milk
  • ½ cup of corn starch (100 g)
  • 2 tablespoons instant coffee, dissolved in cup of hot water (30 g)

Method of preparation

Chocolate ice cream with chocolate, without eggs or powder

I always liked ice cream and it didn't matter if it was fruit or chocolate! It was important to be cold and cool me on hot summer days or simply as a dessert!

I can say that I tried various ice cream recipes, but I didn't like any of them! Where we put that it is done very quickly and does not require separating eggs, to be careful not to get caught in the boil.

I discovered this recipe in the house of my friends in the Azores and since then I can say that I don't need another one, it doesn't taste like eggs, powders, the only basic ingredients being milk, with different additions of fruit, vanilla or chocolate.

Ingredient:

  • 400 ml condensed milk
  • 500 ml of cow's milk cream with a minimum of 35% fat
  • 1 tablespoon vanilla extract
  • 300 g pitted cherries plus a few for the top
  • 2 tablespoons caster sugar
  • 30 g chocolate or chocolate flakes plus a few for the top

Method of preparation:

We put the bowl of the ice cream machine in the freezer at least 24 hours before.

In a glass bowl, mix the cream with the condensed milk and vanilla extract. Let them cool for at least 2 hours.

Put the cherries with the sugar in a saucepan and simmer until it binds like a jam. Be very careful, the fire must be low and mix lightly so as not to break the fruit. Leave to temper and then put in the freezer for 40-50 minutes, during which time stir about 2-3 times. We do this to help the ice cream not melt, when we add it to the composition of milk with cream.

Remove the bowl of the ice cream machine from the freezer and pour the cream composition. We start and let it do its job. If we do not have an ice cream machine we put the composition in a bowl and mix every half hour, for creaminess and to avoid the formation of ice crystals.

Pour the ice cream obtained in a saucepan over which we will add the cherries from the freezer and chocolate. We pass quickly with a spoon through ice cream, just enough to marble lightly. Put the rest of the cherries and chocolate flakes.

We put it back in the freezer for 1-2 hours, depending on how fast it freezes.

10 minutes before serving, take the casserole out of the freezer into the fridge, so that it can be handled more easily. With the help of an ice cream tongs, we will slice and serve with fresh cherries, mint, chocolate or any other combination you like.

1. First, make coffee. I used espresso very hard, but you can also make a brewed coffee. Boil 200 ml. of water. Add 4-5 tablespoons of ground coffee, remove immediately from the heat and cover the pot. After 15 minutes, strain and set the coffee aside. We prepare all the ingredients, to have them at hand.

2. For the basic cream for coffee ice cream, put the yolks together with the sugar and vanilla essence in a heat-resistant bowl. Mix with the mixer at high speed until they are very light in color.

3. The 300 ml. of whipped cream with 30% fat and the 100 milliliters of milk are put in a saucepan on the fire. Heat to boiling point. As soon as it boils, pour the cream over the yolks mixed with the sugar.

4. Carefully mix and transfer the bowl over a pot of boiling water (bain marie). The bottom of the bowl should not touch the surface of the water, but should be heated only by steam. Stir constantly until the cream thickens enough to & # 8222 dress & # 8221 the back of the spoon. If we were to express this in degrees Celsius, it would be about 70 ° C, the temperature at which the yolks are practically cooked. Freezing the cream

The base for the coffee ice cream is refrigerated for at least 3 hours, so that it has a temperature as low as possible before pouring it into the bowl of the ice cream machine. The dish must be well frozen in the freezer for at least 12 hours. The coffee ice cream will be ready in this machine in 25-30 minutes.

If you do not have such a device, the basic cream for coffee ice cream is poured into a bowl, cover and put in the freezer. Stir vigorously every 20-30 minutes to prevent the formation of ice crystals. Keep in mind, however, that you will get the best results with this simple ice cream machine.

When serving, coffee ice cream can be garnished with coffee beans, chocolate sauce, cream, biscuits or whatever you like.

Chocolate Mint Ice Cream & # 8211 the most delicious homemade ice cream I've ever tried!

We present you a recipe for delicious mint ice cream with dark chocolate. From the most affordable ingredients, at home, you get an amazing dessert. The combination of mint and chocolate is a classic one, which is always very popular, especially in summer. It is a less common ice cream, with intense flavor, pleasant appearance, refreshing and light. Enjoy with your family a natural ice cream, without chemical additives and preservatives, which will be to everyone's liking.

Method of preparation

1. Wash, mint and arrange on a kitchen towel. Break the leaves off the twigs.

2. Pour the cream into a saucepan. Add the mint leaves and 60 g of sugar.

3. Put the pan on the fire. Heat the mixture obtained, stirring constantly. Do not bring it to a boil (remove the pan from the heat as soon as you notice small bubbles on the surface).

4. Leave the resulting mixture at room temperature for 1.5 hours.
